Try the suika ‘tuna’ at wagamama Mermaid Quay today. Suika means watermelon in Japanese + guess what? That’s what this ‘tuna’ is made from. Dehydrated watermelon is sliced, seared and served hot – with a look and texture incredibly similar to tuna.
Dressed with a miso sesame sauce, the suika ‘tuna’ steak sits on a bed of white rice with soy seasoning and accompanied by pickled radish, kale and tenderstem broccoli. The dish is served with an avocado, edamame and tofu guacamole.
